Recipe of the Month - quick, no-trouble delicious Cinnamon Buns

2 sticks unsalted butter                                                2 (10 Pack) Pillsbury Golden Layer – Honey Butter flaky buns
4 Tbsp. cinnamon sugar                                              1 lb. light brown sugar
8 oz cream cheese softened at room temperature      ½ cup plumped raisins (or more if you like raisins)

Frosting:
1 lb. confectioners’ sugar (powdered)                          ¼ cup milk

Before: plump raisins – immerse raisins in very hot/boiling water for two minutes.

Instructions: Preheat oven to 350 degrees. In a bowl, combine cream cheese with ¼ cup brown sugar, mixing well. Cover and place in refrigerator. Lightly coat bottom of bundt cake pan with cooking spray. Melt butter, then add remaining brown sugar and stir well.  Bring to a light boil to caramelize then add plumped raisins. Pour 1/3 of the butter/brown sugar mix across bottom of bundt pan.

Remove cream cheese mix from refrigerator. Take one flaky bun at a time in your hands and gently pull outwards on the sides to separate the bun and increase its size. Place about 1 Tbsp of cream cheese mixture in the middle of the bun and fold dough around the mixture, pinching closed. Roll into a tight ball and evenly place balls across bottom of bundt pan. Sprinkle heavily with cinnamon sugar. Pour second 1/3 of brown sugar/butter mix over buns. Repeat process for second layer, and third, if you have enough dough balls.
Bake for 60 minutes. You may need to lay a piece of foil over top of pan after 40-45 minutes if the top layer of buns starts looking dry.

Remove from oven immediately and turn bundt pan over onto large plate.. While cooling, prepare frosting and apply after about 15 minutes. May be served on individual plates or as a cake.

  Recipe of the Month

Recipe of the Month - Cuppa Cake

1 Large Coffee Mug4 tablespoons flour (that's plain flour, not self-rising)
4 tablespoons sugar2 tablespoons baking cocoa
1 egg3 tablespoons milk
3 tablespoons oil    3 tablespoons chocolate chips (optional)
some nuts (optional)Small splash of vanilla

Add dry ingredients into a big mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave, cover with paper towel and cook for 3 minutes on high. The cake may rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (This can serve 2 if you want to share!) Oh, and a scoop of ice cream on the side won't hurt either!

And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Recipe of the Month - Brownies

1/2 cup butter    1 cup sugar........cream together
2 eggs..beat and add to butter and sugar
2 squares chocolate (1 oz)..melt & add to above mixture
1/2 cup flour1 tsp vanilla...add to the above mixture
1/2 cup flaked coconut      1/2 cup walnuts, chopped..stir into mixture.
Grease an 8 x 8 inch pan and bake 325 degrees for 30-35 minutes.  You may double the above recipe and bake in a 9 x 13 in pan for 40-45 minutes.

Fudge Frosting:
1 cup sugar1/2 cup milk
1 square chocolate    1/2 cup butter
Combine the above and boil 3 minutes, stir constantly.  Remove from heat and add 1 tsp vanilla and a dash of salt.  Beat until creamy and thick enough to spread.

Recipe of the Month - Holiday Sauce

12 oz fresh cranberries1/2 cup water
3 Gala or Rome apples, peeled and coarsely chopped
2 Bartlett pears, peeled and chopped coarsely
4 T sugar1 T + cinnamon
Combine and simmer..covered 25-30 minutes till cranberries pop.  Cool and chill.  Serves 6
